Fettuccine Alfredo | Weeknight Family Dinner {vegan recipe}

Fettuccine Alfredo is a dish I've missed for quite a long time since going vegan. It's not something I've ever made at home, as I think of it as it's a dining out sort of dish. You know, fettuccine tossed gently in an elegant béchamel, a white napkin draped across your lap, candlelight and a good glass of Pinot Grigio. The classic version has the green beans swimming in cream of mushroom soup-as-béchamel sauce and topped with fried onions. That recipe will stay put in our family cookbook, as this version of haricot verts is brought into the holiday spotlight, dressed up in a sensuous mustard sauce.

Paella: A Vegetarian One-Dish Feast

Paella is traditionally meant to feed many. The Italians call it risotto, the Spanish, paella. There are similarities and differences, of course, such as the smoky paprika and saffron in paella, and the parmesan and creamy nature of risotto. The first time I had true paella was at a little hole in the wall place called Lola's on Esplanade Avenue in New Orleans.
