Chinese Long Beans {RECIPE}

As the summer moves into fall, I find myself holding on to the last bites of seasonal produce so that I can savor the taste of sunshine. A late August stroll through my local farmers' market had me clasping bunches of long green beans, scooping pulpy handfuls of bright cherry tomatoes into a bag, and that's when I found the inspiration for these Chinese long beans.

This is one of the easiest recipes to make. It really isn't a recipe but a gathering of a few summery ingredients thrown together in a bowl. If it's hot outside, you'll be glad to make this quickly, and enjoy it cold after a few hours in the fridge. I made this out of the produce I brought home from the farmers' market and served it as a salad dish during an outdoor concert that evening. All you need are summery cherry tomatoes bursting in the yellow variety (you can always use red), Chinese long beans, sesame seeds, a hint of creamy tahini and some sweetness with homemade teriyaki. Toss this into your bowl of goodness and taste the sunshine of love.

Chinese Long Beans with Cherry Tomatoes in Sesame Dressing

Ingredients:

  • 1 bunch Chinese long beans, ends trimmed, chopped in 4" lengths

  • 2 cups cherry tomatoes, halved

  • sesame seeds, sprinkled

  • sesame oil

  • mirin cooking wine --or-- sake

  • garnish with borage flowers (optional) --or-- chopped parsley & cilantro (optional)

Sesame Dressing

  • 1/4 cup tahini

  • 1/4 cup fresh squeezed lemon juice

  • 1 tablespoon (a smidge) mayo (vegan is delicious too)

  • splash of water

  • dash of raw teriyaki sauce to taste *(see below recipe)

Whisk sesame dressing ingredients in a separate bowl and combine well.

Set aside for assembly after cooking the beans. 

Raw Teriyaki Sauce

  • 3 tablespoons extra virgin olive oil

  • 2 tablespoons tamari

  • 3 tablespoons of honey

  • 1 tablespoon apple cider vinegar

  • 1 tablespoon grated ginger

  • 1 teaspoon minced garlic

Whisk together all ingredients. Add to sesame dressing. Now you can make the beans and toss them.

How to make this dish:

  1. Chop your beans and halve your tomatoes. Set the tomatoes aside for adding in last.

  2. Heat up your pan to medium heat and drizzle with sesame oil.

  3. Toss in your beans and sauté for about a minute. Coat the beans in the sesame oil, rolling them around in your pan.

  4. Dash in some mirin cooking wine (sake also works fabulously well).

  5. Steam the beans for just awhile, about 5 minutes. Take care in cooking the beans lightly. Do not overcook.

  6. Remove from heat. Place into a bowl to cool down.

  7. Toss the beans with the sesame dressing and sprinkle with sesame seeds.

TIP: Add the dressing little by little, just enough to coat the beans, but not too much.

SAVE YOUR DRESSING for another salad or more beans.

Garnish however you please. I found beautiful borage flowers and thought they brought out the colors of the green beans and yellow tomatoes. So romantic!
