Chai Spiced Almond Milk

Almond milk is an essential in my kitchen. It’s easy to make once you’ve done it and got the hang of it. C’mon, you can do this. Buying almond milk will make you roll your eyes in the supermarket. Really. You won’t go back to drinking static almond milk stabilized with gums and stuff.

Let me show you how easy this can be. It’s life changing.

Add some chai spice to a batch of fresh almond milk and it transforms into a mood lifting drink. Have it cold on ice, or warm it to add to some hot black tea. Make a smoothie using this spiced almond milk— I love adding a spoonful of tahini or almond butter, cacao powder and dates to make it extra nourishing. You won’t really need protein powder.

CHAI SPICED ALMOND MILK

  • 1 cup raw almonds (soaked overnight in filtered water or 1 hour in hot water)

  • 4 cups filtered water

  • 1 pinch sea salt

  • 1 tsp vanilla extract (or 1 vanilla bean, scraped)

  • 1 tbsp cinnamon

  • 4-5 green cardamom pods

  • 2 star anise pods

  • 2 tbsp loose leaf black tea

Instructions

  1. Add the soaked almonds, filtered water, sea salt and cinnamon to a high-speed blender. Blend until smooth.

  2. Strain using a nut milk bag or cheesecloth. Squeeze over a bowl. Pour the strained almond milk into a pitcher and add loose leaf black tea, cardamom and star anise.

  3. Strain the whole spices from milk before drinking. Lasts about a week in fridge.
